I found myself making several a large enough batch to handle a couple of meals during the week. (P.S. your kids will love it, too!)

I have a particular weakness for brownies, so when I saw this diabetes-friendly recipe, I was in heaven! They’re easy to whip up for a delicious snack anytime. Rich and fudgy, and both prep time and baking take a total of just 30 minutes. You may want to bake these a bit longer than the recommended 15 minutes. I baked for just over 20 minutes and that seemed just prefect. Your oven may take more or less than that. Diabetic exchanges: 2 starch, 1 fat.
Coconut Tropical Fruit Salad Recipe
Perfect for breakfast or as a tasty snack, this coconut tropical fruit salad takes just a few minutes to create, and features coconut, mango, apple, pear, orange, kiwi, grapes and banana. Plus coconut to give it a unique tropical flair. Only thing missing might be a sunny beach and crashing waves! Just 101 calories per serving.
